Raw Recipe Challenge Entry

Ingredients:

4 C spinach (lightly packed)
2 bartlett pears (peel and core removed)
1 golden delicious apple (peel and core removed)
½ lemon (juiced)
1 - 3/4 inch piece ginger (peeled and chopped)
1 C water
2 T Avena Goji Berries (soaked in 1 C water)
2 T Toco (optional)

Directions:

Put the Goji berries in a cup of water and set aside. Rinse spinach. Wash, peal and core fruit. Prepare the ginger and juice the lemon (I just use a teaspoon in a circular motion to remove the juice from ½ a lemon). Blend together the spinach, pears, apple, ginger, lemon juice and water until smooth. Add the Goji berries (and the soaking water) and blend until smooth. For extra energy and to support my body on a stressful day I add the Toco at the end and blend just to mix. Drink for breakfast to power up for the day or drink in the afternoon to get a boost.
