Nut-Free Bars

Nut-Free Snack Bars

Raw Recipe Challenge Entry

by Diane, Avena Member — Winnipeg, MB

These raw, nutritious, nut-free treats taste somewhat nutty (thanks to the pumpkin seed butter).

Ingredients:

1c. raisins soaked
1 c. spring water
1/4 c. cocnut oil
1/4 c. unpasteurized honey
1/4 c. agave nectar
1 c. raw pumkin seed butter (gives a peanut-like flavour to the bars)
1 c. sesame seeds
1c. sprouted buckwheat
1 c. hemp seed nut
1 c. sunflower seeds
3 c. shredded cocnut
1/2 c. goji berries or 1 c. cranberries
1/2 c. cacao nibs (grind about 1/3 c. in coffee grinder)

Directions:

Soak raisins in water for a min. of 1 hour, then blend in food processor with a "s" blade until paste-like.

Place honey & coconut oil in dehydrator (set at about 105 degrees) to liquify.

Mix all ingredients together in a bowl.

Spread on  2 teflex sheets about 1/4" thick and dehydrate at 105 degrees for about 6 - 8 hours.

Flip trays onto mesh sheets and score them into bar size pieces ( I used a pizza cutter).

Dehydrate for another 6 -8 hours until desired crispiness is reached (not too dry).

Alternative suggestions

roll in balls and freezing (if you don't have a dehydrator) or rolling in balls, flattening & dehydrating.
