Raw Fruit and Nut Cookies

Raw Fruit & Nut Cookies

Raw Recipe Challenge Entry

Ingredients:

2 1/3 cups of almonds (divided)
1cup of water
½ cup of dates
½ cup of raisins
½ cup of dried apricots
¼ cup/1oz. of pecans
¼ cup/1 oz. of macadamia nuts
¼ cup/1 oz. of pumpkin seeds
1/3 cup of dried papaya
1/3 cup of dried peaches
1 cup of coconut                                                        
2 tsp of cinnamon
¼ tsp of nutmeg
¼ tsp of all spice
1/2 cup of raw chocolate (cacao)

Directions:

Using a blender grind 1 2/3 cups of almonds, adding the water, dates and raisins blend well, place the mixture in a medium bowl.  Use the blender chop the fruit and nuts then add them, the coconut, the spices and the cacao to the almond mixture and mix well.  Grind the remaining 2/3 cup of almonds and place it in a small bowl to roll the cookies in.  Make a ball about 1 inch/1/2 oz. of cookie dough and roll it in the ground almonds.

This makes about 85 cookies.

Each Cookie Approximately 1 inch round or ½ oz.

Note: 1/3 cup of almonds makes approximately ¾ cup of ground almond.
